Grandma's "Blue Plate" Special
Yes.....literally, the plate is blue! This is what whip up for Madison when she's hungry and we don't know what we are making for lunch or dinner. Also, there are some times when the the girls just don't appreciate a REAL meal. One Saturday when lunch rolled around and Grandpa, Shelly and Lexi were napping, Madison came up to me and announced that she was hungry. Well, as we all know, I am not a big fan of cooking. In fact, if I lived alone, I would live on frozen and carryout. But for this, I needed to put on my Grandma Hat....I mean, I didn't want Madison to think I was a 'slouch' in the kitchen. I asked her if she wanted a peanut butter and jelly sandwich. She said yes and I jazzed it up! And if you look really close, you will see that what I came up with is not all that unhealthy. I mean, I think I covered most of the food groups.....well, I might be stretching it with the chips but ya gotta have SOME junk food, right? Besides, the mandarin oranges cancelled out the chips. And I really got kudos from her for cutting the crusts off the sandwich!
Madison has asked for the Blue Plate Special several times since I produced that first one. And, I try to keep it fresh and fun by switching up the side dishes. She loves pickles so sometimes she will find a pickle on her plate which brings a smile. The best part is that I am the only one who can do it right in Madison's eyes. She asked her mom one day for the special and she got a bowl of Ramon Noodles....so I think my turf is safe!
